Healthy Breakfasts on the Go

I can no longer get out of my neighborhood without passing a donut shop.
With a drive-through.
In order to avoid the temptation of stopping for donuts every morning, I had to come up with some alternates. And since I rarely have time to eat before I leave for work, they have to be alternatives that I can eat at work. This limits what I can do, since I only have access to a microwave at work. Here are my favorites for breakfast on the go:
Yogurt/granola
To me, yogurt and granola is a great combination. I make my own yogurt from organic milk, and use a purchased granola topping. Mixed together, it’s a great combination of protein and fiber.
Breakfast burritos
Breakfast burritos are great on-the-go food. They wrap the ingredients up nicely, and you can decide what to put in. I usually make the toppings in batch on the weekends by scrambling eggs with vegetarian sausage, peppers and onion, then bring the topping and tortilla separately to work. I heat up the filling and roll the burrito.
Breakfast casserole
There are lots of great recipes for breakfast casseroles out there. Most of them are theme-and-variation with bread, egg, sausage and veggies. I will make a pan of this on the weekend and take slices of it for breakfast, heating them up in the microwave.
Oatmeal with nuts
I love oatmeal. I keep a canister of quick cooking oats (not instant) on my desk, and a small container of almonds. A quick breakfast is to cook up a cup of oats in the microwave, then add in the nuts and a bit of sugar. This also works well for a snack when I am really hungry and the vending machine is beckoning.
I am very happy I came up with these alternatives for breakfast. I am pleased to say that I have been able to bypass the donut shop every day for over a month.

In the past, I’ve taken some cereal (the good kind: low sugar, high fiber) in a plastic container, and milk in a thermos and had that at my desk once I’ve gotten to work. I usually take a banana along with it. I’ve never baked a breakfast casserole before. I’ll have to try that.
